Crispy Baked Walleye

  • 1 cup Parmesan cheese

  • 2lb walleye filets

  • 1 Cup heavy cream

  • 1 1/2 Tbsp basil

  • 1 Cup bread crumbs

  • 1 Tbsp old bay

  • 1 tsp lemon juice

  • lemon zest (optional)

Directions:

  1. Preheat oven to 425°F

  2. Dry off fillets as much as possible with a paper towel, the drier the better

  3. Pour heavy cream onto a tall plate or into a bowl then roll each fillet around in it until evenly covered with cream

  4. Combine bread crumbs, parmesan and the rest of the dry ingredients into a one gallon ziploc bag

  5. Add one or two fillets coated with cream to the bag at a time. Gently shake the bag until the fillets are evenly coated with crumbs, repeat until all of the fish ar coated in crumbs 

  6. Cook fillets for 20 minutes in a glass casserole dish covered in foil

  7. Let rest for 2 minutes then serve and enjoy!
