Crispy Baked Walleye
1 cup Parmesan cheese
2lb walleye filets
1 Cup heavy cream
1 1/2 Tbsp basil
1 Cup bread crumbs
1 Tbsp old bay
1 tsp lemon juice
lemon zest (optional)

Directions:
Preheat oven to 425°F
Dry off fillets as much as possible with a paper towel, the drier the better
Pour heavy cream onto a tall plate or into a bowl then roll each fillet around in it until evenly covered with cream
Combine bread crumbs, parmesan and the rest of the dry ingredients into a one gallon ziploc bag
Add one or two fillets coated with cream to the bag at a time. Gently shake the bag until the fillets are evenly coated with crumbs, repeat until all of the fish ar coated in crumbs
Cook fillets for 20 minutes in a glass casserole dish covered in foil
Let rest for 2 minutes then serve and enjoy!
