Traditional Italian Gnocchi (NO-KEY)

Gnocchi

Italian gnocchi are small dumplings made from potatoes, flour, and often eggs, creating a pillowy and delicate texture. This traditional Italian dish is a staple in many regions across the country, with variations in shapes and ingredients. The process of making gnocchi is a labor of love, requiring skill and patience to achieve the perfect balance of lightness and chewiness. Once the gnocchi are formed, they are typically boiled until they float to the surface, indicating their readiness. Often served with rich, savory sauces such as pesto, marinara, or gorgonzola, gnocchi represent a timeless and comforting element of Italian cuisine, showcasing the country's dedication to simple yet exquisite flavors.

Ingredients:

  • 2lbs Russet potatoes (4-5 medium)

  • 1 teaspoon Sea Salt

  • 1/2 tablespoon garlic powder

  • 1 tablespoon fresh basil

  • 1/4 Cup grated Parmesan or Asiago

  • 1 large egg

  • 1 1/2 Cups of flour (a little more for kneading also)

Directions:

  1. Boil water in a large pot

  2. Clean and peel potatoes. Then cut them into cubes about 1 inch big

  3. Place the potatoes in the boiling water and cook them for 15-18min or until completely soft.

  4. Drain potatoes and let them cool. Mix the dry ingredients in a bowl while waiting to save time.

  5. When the potatoes are cool enough to handle, mash with a fork and mix the egg in.

  6. Combine the dry ingredients with the potato mixture and knead for 2 minutes on a floured surface.

  7. Roll out into a long rope about 3/4 inch thick and cut into 1 inch lengths.

  8. Drop the gnocchi in boiling water for 3-4 minutes then drain, cool, and enjoy!
