How to make Creamy Tuscan chicken alla penne

I love the simplicity of this dish! Minimal ingredients that are available at just about any store, quick 15 minute meal, and it is just flat out delicicious!

ingredients:

  • 1lb boneless skinless chicken

  • 1lb penne rigate noodles

  • 3 cups heavy cream

  • 5 or 6 grape tomatoes (halved)

  • handful of fresh spinach

  • 3 cloves of garlic (minced)

  • 1 Tbsp olive oil

  • 2 Tbsp butter

Directions:

  1. Start off by mincing the garlic and halving the tomatoes.

  2. Fill a large pot with about 8 cups of water and put on to boil

  3. Start heating a large skillet on another burner (medium-high or 7-8) and put in just enough olive oil to coat the bottom of the pan.

  4. When the pan begins to smoke you are ready to start cooking the chicken. Cook 6-7 minutes on each side.

  5. Start cooking your pasta around this time and don’t forget to salt your pasta water!

  6. Set the chicken off to the side to cool and use the same skillet to make your sauce. Once chicken has cooled enough to handle, cut the chicken into 1/2 inch slices.

  7. Cook your garlic for 30 sec or until fragrant (I like to toss in a knob of butter) then add in your tomatoes and spinach.

  8. Once the spinach wilts, turn the heat down to a medium-low or low (just to simmer) add in the heavy cream and parsley.

  9. Simmer for 6-8 minutes being careful not to burn the cream sauce. You must stir it gently but constantly. Add salt and pepper to taste.

  10. I combine my pasta, chicken, and sauce in the pasta pot starting with the sauce, then pasta, and finally chicken. Stir until combined well and serve on warm plate.

  11. Garnish with fresh parsley and grated parmesan.
